Hors d’oeuvres and Appetizers

Ezme translates from Turkish as “crushed,” a fitting name for this rustic mixture of charred tomatoes, sweet red peppers and onion. My recipe is inspired by Turkish chef Refika Birgül, whose cooking channel on YouTube was my introduction to this wonderfully versatile meze.
Finding a good low-carb dipper for Middle Eastern food is surprisingly difficult. Warmed low-carb tortillas work beautifully for wraps, but no one is going to mistake one for pita. So I veered off script and turned them into something else entirely: crisp, golden flatbread crackers scattered with sesame and nigella seeds.
Muhammara comes from Arabic for “something that has turned red,” an apt name for this richly colored roasted pepper and walnut dip. The result is creamy but substantial, with the earthy richness of walnuts and a deep, savory flavor that makes it difficult to stop dipping.
There are few things more refreshing on a hot summer day than a bowl of chilled cucumber soup. Creamy and filled with fresh herbs, it gets a flavor boost from tangy goat cheese. Best of all, there’s no cooking involved. Everything goes into the blender, then the soup goes into the refrigerator until thoroughly chilled.
Marinated Hermelín cheese is one of the Czech Republic's most beloved pub snacks, traditionally enjoyed with a cold pilsner and good company. Inspired by a memorable meal aboard a brewery boat on Prague's Vltava River, my version recreates the flavors using goat brie in place of the traditional Czech cheese.
Cool off with these elegant Gazpacho Shooters! Made with cherry tomatoes, cucumber, bell pepper, garlic, sherry vinegar and extra virgin olive oil, this silky Spanish-inspired cold soup is naturally low carb and perfect for summer entertaining. Serve in small cups as a refreshing appetizer while guests gather around the barbecue.
This Little Gem Salad with Pistachio-Halloumi Crumble is crisp, bright and substantial enough to anchor a meal. Each lettuce leaf is topped with crunchy crumble made from grated halloumi, toasted cumin and chopped pistachios — a savory low carb alternative to breadcrumbs. Finished with fresh lemon juice and extra virgin olive oil, it’s perfect as a side for grilled chicken or fish, or elegant starter.
This elegant shrimp cocktail features juicy, perfectly brined shrimp, paired with vibrant Green Goddess Dressing. Packed with fresh herbs and creamy lemon-garlic flavor, it’s low carb, make-ahead friendly, and perfect for entertaining. A modern twist on a classic starter.
Whether you’re looking for an hors d'oeuvre to impress or simply want a taste of Bavaria with a unique twist, Obatzda with Goat Cheese is a flavorful, easy-to-make cheese spread that pairs beautifully with seed crackers.
