Some recipes are more than recipes. They’re small acts committed to memory, and then distilled. That’s how I feel about this vinaigrette — a simple blend of oil and vinegar that carries the scent of summer herbs, the rhythm of gardens well-tended, and a few good kitchen tricks that still make me smile.
It begins with tarragon.
A few years ago, after a dismal harvest, I got mad and planted four new tarragon plants to replace the one that barely survived. Those plants did not hold back. They grew with abandon, spilling over the edges of the raised bed like they had something to prove.
