We had a huge cherry tree in our backyard when I was growing up. In spring, its blossoms felt almost magical, like a huge, pale pink cloud that transformed our yard for a week or two every year. When the petals dropped, it meant the cherries were coming.
I’ve loved them ever since.
Sweet cherries are higher in carbs than berries, at around 18g per cup, so I use them sparingly in my low-carb kitchen. This cherry spirit is one of my favorite ways to make good use of a little high-carb fruit.
The recipe is inspired by aquavit, a traditional Nordic spirit often infused with herbs and spices like caraway, dill or fennel. Aquavit is famously served at midsummer feasts across Scandinavia. My version veers from tradition but keeps the idea of infusing spirit with memory and season. It’s a little mysterious. A little moody. And not sweet at all.
