Cauliflower is one of those vegetables that earns its keep on a low-carb table. Reliable. Adaptable. Always available. And, if we’re honest, sometimes a little dull by winter’s end.
For me, roasting presses the reset button. It lets cauliflower’s better qualities shine. A screaming hot oven drives off the water that causes sulfurous smells and blandness. What’s left is sweetness, nuttiness and a savory char that gives this vegetable real personality.
The method couldn’t be simpler. Cut the cauliflower into generous florets or into wedges through the stem. Toss with extra virgin olive oil, salt and pepper, and spread out on a baking sheet. Space matters here. Crowding leads to steaming, and steaming is the enemy. What you want is direct contact with heat, enough to caramelize the edges and deepen the flavor.
