When I started out learning the ins and outs of low-carb baking, using almond flour effectively was a major hurdle. Without gluten or starch, it’s not a straightforward cup-for-cup swap for wheat flour. I quickly realized I needed to start with recipes that were already based on almond flour.
Then came the sweeteners. Erythritol, the keto crowd’s go-to, is a sugar alcohol that leaves an unpleasant cooling aftertaste that only worsens with time. While I’ve since learned how to overcome this, I still reserve it for baked goods that need to be crisp or that shouldn’t come out too brown.
Among the natural options, allulose—a plant-based sweetener—seemed promising, but it isn’t without quirks. It burns easily, it’s only two-thirds as sweet as sugar, and in cookies it tends to make them spread out and be quite soft. But for a cake made with almond flour, those qualities turned out to be an asset. Lower oven temperatures solved the browning issue, and a simple increase of 50% more allulose than the recipe’s sugar amount gave just the right sweetness.
The final piece of the puzzle was the chocolate. Most sugar-free chocolate left me cold. It can have a chalky texture, an odd aftertaste or both. Then I discovered ChocZero. Their chocolate melts beautifully, tastes amazing, and has no cooling effect. Score!
