It’s been decades since Phil and I honeymooned in Provence, but the memories are still vivid. There were walks through abandoned villages. A search for a ruined chapel we discovered on a map of hiking trails. A farm stay where our hosts spoke Provençal, one of the Occitan dialects that straddle the borders between France, Italy and Spain.
Provence can feel wild and elemental, and the food reflects this. It’s rustic and aromatic, with bold and sometimes unexpected flavors. Our only regret is that we never made it to the Camargue. It remains on our bucket list.
Tucked between the Rhône River and the Mediterranean Sea, the Camargue is a land of salt flats and marshes, where white horses roam freely and flamingos skim the briny shallows — yes, real pink flamingos.
